I have a few problems; the amount of flour always seem to be not enough and the dough is usually sticking to the sides of the mixing bowl (1,3 litre mjöl). I always thought it was because of the type of flour I was using, (ingen vetemjöl av Svensk typ här i England), but now, having read the comments below I don't think it's the type of flour but rather the quantity.
The other problem I had was the amount of filling, the basic recipe is 75 g butter for the whole dough. That's not enough for me, so I use 75 g smör, 1 tsk kanel, 1/2 dl söcker, for each half of dough. But I think, I will do as you say, which is 100 g smör, because the buns are usually quite oily at the bottom of the cupcake forms.
My next problem was the dimensions the dough needs to be rolled out at. Your step-by-step guide solved that. Many thanks 😂
And the last problem of course is, there's no fresh yeast to be bought in the UK! I use dry yeast, which is mixed with the flour, sugar and salt. Then add the melted butter mixed with the milk.
The temperature of the liquid has to be 45 C when using dried yeast.
As a guide, it's 8 g dried yeast to 500 g of flour. The yeast packet doesn't come with instructions either!
